Use the right tool: For carbon steel knives, we recommend a sharpening stone, while UHC steel knives perform best with a diamond sharpener. These tools preserve the knife’s fine edge without compromising its hardness.

Sharpening technique: Hold the blade at a 15-20 degree angle against the sharpening surface. Slide the blade smoothly along the stone, alternating sides for an even edge. 

Regular sharpening: Our knives and especially those in our UHC steel holds its edge exceptionally well, meaning you’ll need to sharpen it less frequently. Check your knife’s sharpness periodically and sharpen only when necessary to maintain its cutting performance.
